景寧白茶春茶品質和抗氧化酶活性分析

比較白玉仙茶的2個變種白玉仙茶1號、白玉仙茶2號與其母本白玉仙茶以及當地主要茶葉品種鳩坑和安吉白茶(白葉茶1號)的化學成分和抗氧化酶活性[超氧化物歧化酶(SOD)、過氧化物酶(POD)、過氧化氫酶(CAT)及多酚氧化酶(PP0)]的差異;研究惠明寺和天堂湖2個不同生態(tài)環(huán)境和春夏2個不同嫁接時間對這2種茶葉品質的影響.結果顯示:白玉仙茶1號的蛋白質、水溶性糖、兒茶素等品質成分含量比其他品種高14.9%~32.1%;白玉仙茶2號的氨基酸含量比其他品種高16.1%~21.8%,且酚氨比低16.0%~33.3%,而色差值顯示白玉仙荼2號浸提液的DA值(紅度)最大,DB值(黃度)最小,即黃綠色最淡;此外,白玉仙茶1號、白玉仙茶2號中的SOD活性比鳩坑和安吉白荼高6.2%~9.4%,表明它們可能具有較強的抗逆性.對不同產地的比較發(fā)現,天堂湖茶葉中各種品質成分的含量比惠明寺的高出5.9%~80.2%,但酚氨比也高11.2%~15.8%,天堂湖白玉仙茶2號的湯色DA值比惠明寺的低17.3%,DB值高20.7%,更偏黃綠;但白玉仙茶1號、白玉仙茶2號的抗氧化酶活性在2個不同環(huán)境中無顯著性差異.對不同嫁接時間的比較發(fā)現,春天嫁接比夏天嫁接更有利于茶葉中主要化合物的積累.白玉仙茶1號在春天嫁接,各品質成分含量比在夏天嫁接提高了27.4%~42.2%,湯色的DA值增大了6.0%,綠度較淺,而白玉仙茶2號在春天嫁接,水溶性糖可多出47.4%,湯色DA值減小了12.5%,DB值增大了16.5%,較為黃綠;嫁接時間對這2種茶葉的抗氧化酶活性沒有顯著影響.
